On the Origins of Panettone, Italy's Signature Christmas Dessert

Panettone is Italy’s signature Christmas dessert, along with Pandoro. But how did panettone originate?
Well, nobody knows for sure. In fact, there are several stories surrounding the creation of panettone. What they all seem to have in common is the place of origin: Milan.
It looks like the first time panettone was mentioned in writing was around the end of the 15th century in Milan, at the time of Ludovico il Moro, the prince who ruled as the Duke of Milan from 1494 to 1499. However, it was not until the 18th century that panettone was written about in association with Christmas, when it was called ‘pan del ton’, or luxury bread.
As for the legends surrounding its origins, one says that a hawker at the service of Ludovico il Moro created an ancestor of panettone when, together with a baker friend, decided to add a lot of butter to a classic bread dough.
Another legend says panettone originated in a convent in Milan, when a nun, having only a few ingredients in hand to make a cake for her sister nuns, decided to add them all to the bread dough: eggs, sugar, candied fruit and raisins. Before putting it in the oven, she engraved it with a cross on top to bless it.
One more legend says that panettone could have been created by a cook working at the court of Ludovico il Moro. During a Christmas banquet, the cook had created a recipe for a particular dessert which, however, burned. To come up with something else quickly, he took some dough and added candied fruit, eggs, sugar and raisins. The result pleased Ludovico il Moro so much that he asked the cook to reproduce the cake every year.

Ebbene, nessuno lo sa per certo. In effetti, sono diverse le storie che riguardano l’invenzione del panettone; ciò che sembrano avere tutte in comune è il luogo d'origine: Milano.
Pare che la prima volta che il panettone fu menzionato per iscritto sia stata intorno alla fine del XV° secolo a Milano, all'epoca di Ludovico il Moro, il principe che regnò come Duca di Milano dal 1494 al 1499. Tuttavia, non fu fino al XVIII° secolo che il panettone fu menzionato in associazione al Natale, chiamato per iscritto ‘pan del ton’, o pane di lusso.
Quanto alle leggende che ne riguardano le origini, si narra che un falconiere al servizio di Ludovico il Moro creò un antenato del panettone quando, insieme ad un amico fornaio, decise di aggiungere molto burro ad un classico impasto di pane.
Un'altra leggenda narra che il panettone abbia avuto origine in un convento a Milano, quando una suora, avendo a disposizione pochi ingredienti per fare una torta per le sorelle, decise di aggiungerli tutti all'impasto del pane: uova, zucchero, canditi e uvetta. Prima di infornare, ne incise la parte superiore con un segno a forma di croce per benedirlo.
Un'altra leggenda racconta che il panettone potrebbe essere stato creato da un cuoco che lavorava alla corte di Ludovico il Moro. Durante un banchetto natalizio, il cuoco aveva ideato una ricetta per un dolce particolare, che però si bruciò. Per rimediare velocemente con qualcos'altro, prese un un po’ di impasto e aggiunse frutta candita, uova, zucchero e uvetta. Il risultato piacque così tanto a Ludovico il Moro che chiese al cuoco di riprodurre la ricetta ogni anno.
